Using a base spirit derived from their own Yamaneko sweet potato shochu, its distilled with botanicals like juniper, sansho pepper, kumquat, yuzu, hyuganatsu (a local citrus), sakaki wood, ginger, and shiitake mushroomsmost of which are estate grown or locally sourced.
